Curry Sauce

Makes 5 cups

This sauce is wonderful over chicken or fish dishes and served with jasmine or sticky rice.

Ingredients:

  • 1 ½ oz unsalted butter
  • 2oz onion thinly sliced
  • 5 cups of chopped fresh pineapple
  • 1 banana, peeled and thinly sliced
  • 2 apples cored and thinly sliced
  • 1 ½ oz whole meal flour
  • 1 ½ oz medium curry powder
  • 2 tablespoons of unsweetened coconut
  • 5 cups of Imagine Organic Chicken Stock
  • Salt to taste
  • ¼ tsp of chopped fresh tarragon
  • 1 bay leaf
  • 1 celery stick sliced
  • ¼ tsp of coarsely chopped parsley

Directions:

  1. In a medium saucepan, melt the butter over a low heat.
  2. Stir in the onion, cover and cook for five minutes.
  3. Uncover and add the fruit, cook 10 more minutes stirring occasionally.
  4. Sprinkle in the flour, curry powder and coconut, mix well and cook for 1 minute before adding the chicken stock.
  5. Bring to a boil, then lower the heat and simmer gently.
  6. Add the rest of the ingredients and cook for 30 minutes.
  7. Have a large sieve ready. Discard any large pieces and rub the ingredients through the sieve. Taste and season with salt.

Creamy Tomato Pasta Sauce With Basil

Makes about 3 1/2 to 4 cups of sauce, enough for 8 to 12 oz. of dry pasta

Ingredients:

  • 1 onion, chopped coarsely
  • 3 to 4 cloves garlic, minced
  • 3 to 4 Tbsp. olive oil
  • 1 lb. tomatoes, diced (roma suggested) or 16 oz. can drained, diced
  • 1/2 tsp. red pepper flakes (optional)
  • 2 tsp. balsamic vinegar
  • 3 cups Imagine Organic Creamy Tomato Soup
  • 5 Tbsp. fresh chopped basil
  • 3 to 4 Tbsp. parmesan cheese (optional)
  • salt and pepper to taste

Directions:

  1. Sauté onions and garlic with a little salt over medium heat to soften.
  2. Add tomatoes and cook over high heat to wilt the tomatoes.
  3. Add remaining ingredients and heat until bubbling. Taste and adjust seasoning.
  4. Serve over hot pasta, garnish with grated parmesan and fresh basil leaves.

Mushroom Gravy

Ingredients:

  • 2-1/2 C. diced onion
  • 2 T. oil
  • 1 t. minced garlic
  • 2 t. chopped fresh basil
  • 2 t. chopped fresh oregano
  • 2 t. chopped fresh thyme
  • 1 t. salt
  • 5 cups diced mushrooms
  • 1/4 cup tamari (or soy sauce)
  • 3 cups Soy Dream Original Beverage
  • 1/2 C. whole-wheat pastry flour
  • 2 C. Imagine Organic Vegetable Broth

Directions:

  1. In a medium pot, cook onions for 5 minutes over medium heat in oil and garlic. Add the chopped herbs and salt and increase heat to medium-high. Cook for 1 minute.
  2. Add mushrooms, tamari and Soy Dream Beverage. Bring to a high simmer; do not boil.
  3. Mix flour and water to a smooth consistency and slowly stir this into the pot, constantly whisking until thickened, about 3 to 4 minutes.
  4. Reduce heat to low and let gravy simmer for another 5 minutes.
